IT'S ALL ABOUT ALKALINITY:
Our biological terrain comprises our body's digestive tract, lymph system, blood, urinary tract, interstitial and interstitial fluids. Our bodies are alkaline by design and acid by function. Maintaining proper alkalinity is essential for life, health, and vitality. Simply put - an imbalance of alkalinity creates a condition favorable to the growth of bacteria, yeast and other unwanted organisms. Maintenance of an alkaline pH in our tissues and cells is critical to cellular health. In contrast, our digestive tract (except for our normally alkaline mouth) has varying degrees of acid by design, and our urinary tract should be slightly acidic for healthy function. 
All the cells (billions of them) that make up the human body are slightly alkaline, and must maintain alkalinity in order to function and remain healthy and alive. However, their cellular activity creates acid and this acid is what gives the cell energy and function. As each alkaline cell performs its task of respiration, it secretes metabolic wastes, and these end products of cellular metabolism are acid in nature. Although these wastes are used for energy and function, they must not be allowed to build up. One example of this is the often painful lactic acid which is created through exercise. The body will go to great lengths to neutralize and detoxify these acids before they act as poisons in and around the cell, ultimately changing the environment of the cell. Most people and clinical practitioners believe the immune system is the body's first line of defense, but in actuality it is not. It is very important, but functions more like a very sophisticated clean-up service. We must Instead, we must look at the importance of pH balance as the first and major line of defense against sickness and disease and for health and vitality.
If we were to ask "What is killing us?", the answer might be "ACIDOSIS"!
A state of acidosis is simply the lack of oxygen and available calcium which the body uses to maintain its alkaline balance. Calcium makes up 1.6% of our body weight. It is literally the human glue that holds the body together. Calcium is so biochemically active that it has been likened to an octopus. A calcium ion can hold onto seven other molecules while it grabs onto one molecule of water. No other ion can do this. And it is the right size to easily get in and out of the human cell. As it does this, it takes a chain of nutrients into the cell and then leaves to get more nutrients.

CALCIUM DEPLETION
The biggest problem scientists have found is that over time the human body becomes depleted of calcium. A compound called mono-ortho-calcium phosphate is the chemical buffer for the blood. This buffer maintains the alkaline level (or the lack of acidity) in your blood. Without it you would die. If the acidity level of your blood changes even slightly you die immediately. But in order to supply enough calcium for buffering we must have enough calcium being absorbed from our diet or our body will simply rob the needed calcium from our bones and teeth. The more acidic we become, the harder it is for oxygen to be present, so our biological terrain also becomes more anaerobic. Without adequate oxygenation, unfriendly bacteria, viruses, molds, and fungus can live and prosper. Then our cells cannot carry on their life-giving functions in a very efficient manner because our biological chemical reactions need oxygen.
The human body is very intelligent. As we become more and more acidic the body starts to set up defense mechanisms to keep the damaging acid from entering our vital organs. It is known that acid gets stored in fat cells. After all, if the acid does come into contact with an organ the acid has a chance to eat holes in the tissue. This may cause the cells to mutate. The oxygen level drops in this acidic environment and calcium begins to deplete. So as a defense mechanism, your body may actually make fat to protect you from your overly-acidic self. Those fat cells and cellulite deposits may actually be packing up the acid and trying to keep it a safe distance from your organs. The fat may be saving your vital organs from damage. Many people have found that a return to a healthy inner biological terrain helps them to lose excess fat.
Osteoporosis is very confusing for many people. Most people think they can eliminate it by increasing their consumption of milk and dairy products. But in the countries where the consumption of dairy products is very low the instances of osteoporosis is very rare. Osteoporosis is an acidosis problem. As the body becomes more acidic, to protect against the event of heart attack, stroke, illness, or even cancer, the body attempts to remain healthy. So, it steals calcium from the bones, teeth, and tissue. As bone mass becomes depleted, this is what we call osteoporosis. As we saturate the body with calcium this brings the alkaline pH up and drops the acid levels down.
One of the first warning signs of an acidic biological terrain is calcium deposits. A little known fact is that there has never been a scientifically proven association between calcium deposits in the body and nutritional calcium. In fact quite the opposite is found in the results of testing calcium deposits of the body. Calcium deposits come not from dietary calcium but from the structural calcium of our bones and teeth!
So if calcium deposits are forming, we know our inner biological terrain is too acidic. Our dietary intake of calcium is not keeping up with the calcium buffering needed and we are actively pulling calcium from our bones and teeth. It all works like a little train, from the bones to the fluids and cells, to the blood. As our biological terrain becomes acidic, our pH level drops. When this happens we start losing calcium out of the blood, the bones, and the tissues. This is a safety mechanism. Now your biological terrain's oxygen level drops leaving you tired and fatigued, allowing fungus, mold, parasites, bad bacteria, and viral infections to flourish and gain a hold throughout the body.


BENEFITS OF ALKALINITY
Today's lifestyle causes a multitude of disorders and malfunctions in the metabolism of our bodies. Despite the efforts of the Food and Drug Administration and the Environmental Protection Agency, our food supply, drinking water, air and soil are becoming increasingly contaminated with toxic chemicals. Never before has the human body been presented with such a heavy burden of foreign substances to metabolize and eliminate thus taxing the body beyond its natural capabilities of detoxification.
Many people just don't feel good anymore. Some find themselves being much more susceptible to colds, or to whatever "bug" is currently going around. Much more serious are the increasing cases of autoimmune diseases such as lupus, rheumatoid arthritis, multiple sclerosis, chronic fatigue syndrome, and fibromyalgia. "Health" and "wellness" have become relative terms.
Low-level toxicity from many sources can be very difficult to detect. The combined action of all these toxins create a "toxic cocktail" effect which can seriously weaken the body and the mind through a process we call "fermentation" or over-acidification of the blood and tissue as a result of the proliferation of yeast, fungus, and bacteria.
Yeast and fungus are single cell life forms which inhabit the air, soil, water, and many of the foods we eat. They are more highly developed than the intermediate states of bacteria or the early stages of viruses. Over the years, they have developed into over 500,000 different species. They are opportunists and survivalists. They are constantly looking for new places to house themselves, where they may begin to colonize and proliferate. Being that they are single cell life forms, they can only be seen under a microscope but once colonized, these cells make a visible presence in the form of mushrooms, and molds on food.
Yeast, fungus, bacteria, mold, and viruses tend to house themselves in very specific sites in the body, depending on their particular requirements for nutrients and colonization conditions. All are capable of causing severe fermentation through the by-products of their metabolism, which enter the extra cellular fluid or the blood and then are distributed throughout the body. This culminates in the over-acidification of the blood and tissues which systemically poison and destroy the cells of the body.
This condition we call over-acidification is a direct result of an inverted way of eating - the abundance of animal protein, especially red meat and pork, dairy products (milk, cheese, ice cream), sugar in any form (sucrose, fructose, glucose). 
The primary source of nourishment for yeast, fungus, and bacteria is sugar. As these organisms feed off the sugar and proteins of our bodies they produce and excrete waste called toxins. These toxins effect us physically, emotionally, and spiritually. The solution to this growing problem is to cleanse the blood and nourish the cells. We do this by eliminating those foods which create over-acidification and eating more foods that are alkaline. Yeast, fungus, bacteria, mold, and virus can only survive in an acid base, they cannot survive in an alkaline base. It is, therefore, very important that there is a proper ration between acid and alkaline foods in the diet. When an ideal ratio is maintained, yeast fungus, bacteria, mold, and virus will revert back to their normal healthy state. The ideal ration in a normal body is 4 parts alkaline to 1 part acid, which will allow the body to maintain a pH factor of 7.365. pH refers to the relative concentration of Hydrogen (H+) ions in a solution. Low pH values indicate higher concentrations of Hydrogen ions or acids, and high pH values indicate low concentrations of Hydrogen ions or alkaline.
For example, 10 to -1 is more acidic than 10 to -14

Consumers know less about the water they pay dearly for in bottles than what they can drink almost for free from the tap because the two are regulated differently, congressional investigators and nonprofit researchers say in new reports.
Both the Government Accountability Office and the Environmental Working Group, a nonprofit research and advocacy organization, recommend in reports released Wednesday that bottled water be labeled with the same level of information municipal water providers must disclose.
The researchers urged Americans to make bottled water "a distant second choice" to filtered tap water because there isn't enough information about bottled water. The working group recommends purifying tap water with a commercial filter, however.
Both reports were released at a congressional subcommittee Wednesday morning.
Bottled water — an industry worth about $16 billion in sales last year — has been suffering lately as colleges, communities and some governments take measures to limit or ban its consumption. As employers, they are motivated by cost savings and environmental concern because the bottles often are not recycled.
Bottled water sales were growing by double-digit percentages for years and were helping buoy the U.S. beverage industry overall. But they were flat last year, according to trade publication Beverage Digest.
Beverage Digest editor John Sicher said some consumers are turning on the tap during the recession simply because it's cheaper.
From 1997 to 2007, the amount of bottled water consumed per person in the U.S. more than doubled, from 13.4 gallons to 29.3 gallons, the GAO report said.
The issue before a subcommittee of the Energy and Commerce Committee was less about waste and water quality concerns and more about the mechanics of regulating bottled water.
As a food product, bottled water is regulated by the Food and Drug Administration and required to show nutrition information and ingredients on its labels. Municipal water is under the control of the Environmental Protection Agency.
The two agencies have similar standards for water quality, but the FDA has less authority to enforce them, the GAO said, and the environmental agency requires much more testing.
Subcommittee chairman Rep. Bart Stupak, D-Mich., said the subcommittee was requesting information Wednesday from a dozen bottled water companies on their water sources, treatment methods and two years' results of contaminant testing. It was not immediately clear which companies were being contacted.
"Consumers may not realize that many regulations that apply to municipalities responsible for tap water do not apply to companies that produce bottled water," he said in statements opening the hearing.
The GAO noted the FDA has yet to set standards for DEHP, one of several chemicals known as phthalates that are found in many household products, while the EPA limits the presence of phthalates in tap water.
In a survey of officials in all 50 states and the District of Columbia, the GAO found they think consumers are misinformed about bottled water.
"Many replied that consumers often believe that bottled water is safer or healthier than tap water," according to the GAO report.
The Washington, D.C.-based Environmental Working Group said in its report that consumers do not get enough information to determine which water is best for them.
Both groups said some bottled water brands include the same information required of tap water providers on either labels or company Web sites.
The GAO called for more research but said the FDA should start by requiring that bottled water labels tell consumers where to find out more.
Community water systems must distribute annual reports about their water's source, contaminants and possible health concerns.
Consumers should know where all their water comes from, how it is treated and what is found in it, said Richard Wiles, senior vice president for policy and communications for the Environmental Working Group.
"If the municipal tap water systems can tell their customers this information, you would think that bottled water companies that charge 1,000 times more for this water could also let consumers know the same thing," he told The Associated Press.
The bottled water industry's trade group, the International Bottled Water Association, planned to testify Wednesday that the product, — subject to the same regulation as other soft drinks, teas, juices and other beverages — is safe. Additional standards apply for bottled water products labeled as "purified water" or "spring water," among other labels, because they must prove a connection to those sources, according to planned testimony from Joseph Doss, president and chief executive of the International Bottled Water Association.
Doss said consumers can learn about bottled water by contacting the company, reading its Web site and visiting sites run by state governments.
State safeguards for bottled water often exceed the federal, though they are less stringent than for tap water, the GAO wrote.
